Flourless Peanut Blondies

A super tasty gluten & dairy free treat for those lazy Sundays! (Absolutely unreal as a heads up, We ate all these in one sitting...)

Ingredients

- 250g Knottys Smooth Peanut Butter
- 110g Honey
- 1 egg
- 1/4 teaspoon sea salt, plus extra as a topping
- 1/2 teaspoon baking soda
- 80g dark chocolate chips
- 10g chopped nuts

Look at that mouthwatering gooey centre!

We didn't lie when we said these were good...

Method

Step 1

Preheat oven to 180 degrees celsius and line a baking tine with baking paper. I chose a brownie tin, but a bread tin would work best for these measurements.

Step 2

In a bowl combine the peanut butter, honey, egg, salt, and baking soda. Stir until you have a thick batter, and then fold in the dark chocolate chips.

Step 3

Pour the batter into the prepared baking tin.

Step 4

Sprinkle coarse sea salt and chopped nuts over the top.

Step 5

Bake until the top is a light golden brown, roughly 20-24 minutes. Let the brownies cool entirely before cutting - put into the fridge for an hour to cool in the baking tin. Cut into squares and serve!
