Sweet Potato Stew
This Sweet Potato Peanut Stew is truly heaven in a bowl and bound to warm you up from the inside out.
Ingredients
- 1 Brown Onion diced
- 3 Cloves of Garlic Minced
- 2 inch Knob of Ginger peeled and finely diced
- 2 large Sweet Potatoes diced
- 1 litre Tomato Juice
- 2 cans Plum Tomatoes
- 2/3 cup Knottys Smooth Peanut Butter
- 1-2 tsp Cumin (adjust to taste)
- 1/2 tsp Cayenne Pepper
- 4 cups Baby Spinach Leaves
- Salt & Black Pepper to taste

Method
Step 1
In a large pot, heat 1 tablespoon of water over medium heat. Add the onions, garlic, ginger and sweet potatoes with a pinch of salt. Sauté for 5 minutes, or until the onions are soft. Add water a tablespoon at a time if things begin to stick.
Step 2
Add the tomato juice and tomatoes, bring to a boil, then reduce the heat to medium-low. Simmer, covered, for 10 minutes.
Step 3
Add the peanut butter, cumin and cayenne pepper, and stir well to dissolve the peanut butter into the stew. Simmer another 5-10 minutes, or until the sweet potatoes are fork tender.
Step 4
In the pot, mash some (but not all) of the sweet potatoes with a potato masher or large fork. Add the chopped spinach and stir to mix it into the hot stew. Simmer, covered, 2-3 minutes or until the spinach is wilted. Season with sea salt and freshly ground black pepper, to taste.
Step 5
Serve over brown rice.
Step 6
Garnish with chopped coriander and a lime wedge.
