Peanut Butter & Chocolate Quinoa Parfait
It's creamy, it's sweet, it's gooey. And guess what's even better? It's just a few ingredients you have to whip together and you have a seriously delicious peanut butter parfait!
Ingredients
- 4 Tbsp Black Chia Seeds
- 2 Tbsp Unsweetened Cocoa Powder
- 1 cup Milk of Choice
- 3 Tbsp Knotty’s Crisp Rice PB
- 1 Tbsp Maple syrup
- 2-3 Tbsp Water
- 25g Butter
- 1 Cup Cooked Quinoa
When your breakfast involves chocolate, you know it's going to be a good day.
Method
Step 1
The night before you want to eat this breakfast, whisk together the chia seeds, cocoa powder and milk. Place it in a bowl or mason jar and refrigerator overnight (or for at least 2 hours).
Step 2
Mix together the peanut butter, honey and water until smooth.
Step 3
Put the chia pudding in a jar. We re-purposed an old Knotty’s jar!
Step 4
Add a scoop of the PB mixture on top of the chia pudding and smooth to form an even layer. Repeat these last two steps until you have used up all the mixture.
Step 5
Add 1/2 cup quinoa to top the peanut butter.
Step 6
Garnish to taste & enjoy!
