Banana Oat Cookies
Put your browning bananas to good use!
Ingredients
- 170g honey
- 1 tsp vanilla extract
- 1 large egg
- 125g peanut butter
- 1/4 tsp cinnamon
- 1/2 tsp salt
- 1/8 tsp baking soda
- 1 1/2 tsp baking powder
- 180g oats
- 35g fudge pieces
- 35g dark chocolate chips
A snack bursting with
cor-blimey bananas.
Method
Step 1
Mix together the wet ingredients - honey, vanilla extract, egg and peanut butter.
Step 2
Set to one side, and then combine all the dry ingredients together - cinnamon, salt, baking soda, baking powder, oats, fudge pieces, and dark chocolate chips.
Step 3
Combine the two mixtures well.
Step 4
Wet your hands, and roll the mixture into small 2-3cm diameter balls and place onto a baking tray with baking paper. Pop in the fridge to set for at least 30 minutes.
Bake in the oven on around 180c for roughly 10 minutes - until the cookies are golden and firm on the edges. N.B. As these are oat cookies, they will stay soft until they have cooled so it’s very easy to keep them cooking thinking they are undercooked.10 minutes should be plenty!
Step 5
Place the baking paper and cookies onto a wire rack to cool for a couple of minutes, and then leave to cool completely. Enjoy now or can also be frozen and enjoyed by future you!
